Description

These Pumpkin Popsicles start by whisking half a can of coconut milk with pumpkin puree, maple syrup, pumpkin pie spice, and a pinch of sea salt to create a spiced pumpkin layer. The remaining coconut milk is mixed separately with cocoa powder, maple syrup, vanilla, and sea salt to form a smooth chocolate layer that optionally includes black cocoa powder for added depth.

The popsicles are assembled by layering the pumpkin mixture and the chocolate mixture alternately in molds, sprinkled with toasted chopped pecans for added crunch. After inserting sticks, they are frozen until firm, resulting in a dessert that offers contrasting tastes and textures—spiced pumpkin smoothness and a creamy chocolate coolness with pecan crunch.

  • 14 ounce coconut milk can
  • ½ cup pecan chopped, toasted

The Pumpkin Layer

  • ½ cup canned pumpkin 2 tablespoons
  • 1 tablespoon maple syrup
  • 1 teaspoon pumpkin pie spice see notes
  • sea salt a pinch

The Chocolate Layer

  • 3 tablespoons cocoa powder
  • 2 teaspoons maple syrup
  • 1 teaspoon vanilla
  • sea salt a pinch
  • black cocoa powder optional 1 teaspoon

Instructions

  1. Pour ½ the can of coconut milk into a medium-sized bowl. Add all the pumpkin layer ingredients and whisk well. Taste the batter and add more maple syrup if you'd like a sweeter popsicle.
  2. Pour the remaining coconut milk into another bowl and whisk in the chocolate layer ingredients.
  3. Layer the two batters in popsicle molds, top with the pecans, and place the popsicle sticks in the batter.  Freeze until firm, at least 2 hours. To release the popsicles from the mold, run hot water over the mold, being careful not to let the water get inside the mold.
