Ingredients

Servings

Vanilla Yogurt

  • 1 1/2 cups Greek yogurt plain, 350 grams
  • 1-2 tablespoons maple syrup 15-30 milliliters
  • 1 teaspoon vanilla extract

Pumpkin Layer:

  • 1 1/2 cups pumpkin puree pure, 370 grams
  • 2 tablespoons maple syrup 30 milliliters
  • 1 1/2 teaspoons pumpkin pie spice

To assemble:

  • 1-1 1/2 cups granola store-bought or homemade, 100-150 grams
  • Whipped Cream for topping, optional
  • Sprinkles for topping, optional, fall

Instructions

To make the Vanilla Yogurt:

  1. In a medium bowl, whisk together the Greek yogurt with maple syrup to taste and vanilla extract. Cover and refrigerate until ready to assemble the Pumpkin Spice Parfaits.

To make the Pumpkin Layer:

  1. In another medium bowl, whisk together the pumpkin puree, maple syrup, and pumpkin pie spice.
  2. Whisk in 2 tablespoons (30 milliliters) of the vanilla yogurt mixture. Cover and refrigerate until ready to assemble.

To assemble:

  1. Cover the bottom of four small serving glasses with a layer of granola.
  2. Top with a layer of the vanilla yogurt.
  3. Cover with a layer of the pumpkin mixture.
  4. Continue to layer with granola, yogurt, and pumpkin until you reach the top of the glass with a final layer of pumpkin.
  5. Serve the parfaits immediately with a dollop of whipped cream, additional granola, and sprinkles if desired.
