Queso Frito [Recipe + Video] Fried Cheese

Queso Frito is a simple fried cheese dish made by cutting queso de freír into slices and pan-frying them in hot oil until golden brown. The cheese develops a crispy exterior while maintaining a slightly melty interior, and seasoning with corn starch can help prevent melting. This preparation creates a satisfying texture contrast and a mild, creamy flavor. It is commonly served as an appetizer or snack and allows for personal preferences in frying time to achieve desired doneness.

Description

Queso Frito involves slicing queso de freír into pieces approximately 2 by 3 inches and about a quarter inch thick. The slices are patted dry to reduce oil splatter and fried in hot oil heated to around 350 ºF (175 ºC). Each side of the cheese is fried until it turns a golden brown color, forming a crisp outer layer. If the first slice melts rather than fries, coating the slices with corn starch helps protect them from melting too quickly. Frying should be done carefully to maintain high oil temperature and avoid overcrowding the pan.

The flavor is mild and creamy from the cheese, enhanced by the frying process which adds a slightly crunchy texture. The oil used for frying imparts a subtle richness without overpowering the cheese’s taste. Queso Frito offers a flexible snack or appetizer option, and frying time can be adjusted to preferences, from lightly golden and softly melty to deeply browned and crisp.

Adjust the frying time according to your personal preference, taking care to retain the firm texture of the cheese while achieving the desired golden color. Using corn starch only when needed can maintain the cheese’s structure. Serve immediately after frying to enjoy the contrast between the crisp outside and the tender inside.

Ingredients

Servings
  • 1 pound queso de freír [0.23 kg]
  • cup cooking oil for frying

Instructions

1. Prepare the cheese

  1. Cut the cheese into 12 slices (2" x 3", ¼" thick, approx). Pat dry the cheese with a paper towel to minimize splatters.

2. Fry

  1. Heat the oil over medium-high heat[350 ºF or 175 ºC] in a medium pan, and fry the cheese on one side until it turns golden brown (fry one slice first to see if it fries well, see notes if it doesn't). Turn and repeat. Do not add many slices at the same time as the oil must remain very hot to prevent the cheese from staying in the oil for too long.

Notes

  • If the cheese begins to melt instead of frying, coat the slices lightly with corn starch and shake off excess before frying.
  • Frying one slice initially helps assess how the cheese reacts in your oil temperature.
  • Adjust the frying duration to achieve your preferred level of golden color and meltiness in the cheese slices.
