This quick and easy prosciutto melon salad with mozzarella is a delicious starter or side dish and is perfect for summer feasting.

Ingredients
- 3 cups melon balled/cubed
- 150 g (5oz) prosciutto
- 300 g (10oz) mozzarella / Bocconcini
- 3 cups arugula/rocket
For the dressing
- ¼ cup olive oil
- ¼ cup lemon juice
- salt and pepper to taste

Instructions
- Halve the melon then scoop out the seeds.
- Using a melon baller, scoop balls of melon out and place in a bowl. Alternatively, chop the melon into cubes.
- Whisk together the olive oil, lemon juice, salt and pepper.
- Place a bed of arugula/rocket into a serving bowl then add the melon balls and mozzarella. Add the prosciutto.
- Pour over the dressing and serve.
