Quick Fruit Piroshki

Quick Fruit Piroshki are soft fried dough pockets filled with a sweet fruit jam, typically cherry or berry. The dough combines buttermilk, sugar, baking soda, and flour for a tender texture. Each piece is rolled out, filled generously with jam mixed with sugar, and carefully sealed before frying in oil over low heat to avoid burning and ensure even cooking. They provide a lightly crisp outer layer with a sweet, juicy filling inside, making them a satisfying sweet snack or dessert.

Description

Quick Fruit Piroshki feature a dough made from buttermilk, sugar, baking soda, and flour, which is gently mixed and rested briefly to develop a soft, workable texture. Divided into 15 pieces, each dough portion is shaped, rolled out, and filled with a sugar-sweetened fruit jam of choice. The edges are pinched firmly to prevent filling leakage. Cooking takes place in a deep pan with preheated oil over low heat, allowing the piroshki to fry evenly until lightly browned and cooked through. The result is a tender, fried dough with a bright and sweet fruit center.

The use of buttermilk and baking soda creates a tender crumb with a slight tang that complements the sweet filling. Careful sealing ensures the preserves remain inside during frying, making each bite juicy without falling apart. These piroshki are suitable as a handheld fruit pastry for teatime or casual snack occasions.
