Raspberry Baked French Toast

Raspberry Baked French Toast uses thick slices of Hawaiian bread soaked overnight in an egg and cream custard with fresh raspberries nestled inside. Baking covered then uncovered creates a tender, custardy interior with a lightly browned top. Lightly dusted with powdered sugar and served with maple syrup, it offers a fruity twist on the classic baked French toast, combining rich texture and bright berry flavor.

Description

This Raspberry Baked French Toast highlights soft Hawaiian bread cut into chunks and layered with fresh raspberries. The bread is soaked in a custard made from eggs, heavy cream, sugar, orange zest, vanilla, and salt, which is poured over and absorbed either overnight in the refrigerator or for a few hours prior to baking. This soaking step allows the bread to thoroughly absorb the egg mixture, resulting in a creamy texture after baking.

During baking at 350°F, the dish is covered first to keep moisture in, then uncovered to brown the top. The raspberries in the middle layer provide pockets of tartness and moisture that contrast with the sweet custardy bread. Dusting with powdered sugar before serving and pairing with maple syrup adds a classic sweetness and finishing touch to the dish.

This baked French toast is ideal for a special breakfast or brunch because it can be prepared the night before to save time in the morning. Serving it warm in squares with syrup lets you enjoy the balance of creamy bread and fresh fruit throughout.
