Description

Raspberry Fool involves pureeing most of the fresh raspberries with granulated sugar to release their juice and sweetness. Separately, heavy whipping cream is whipped together with powdered sugar and vanilla extract until stiff peaks form, providing a rich, airy base. Folding the raspberry puree gently into the whipped cream maintains swirls of color and distinct berry flavor without losing the light texture.

The dessert is portioned into small bowls or glasses, topped with additional whole raspberries, and served chilled. Its balance of tart raspberry and creamy sweetness makes it a refreshing finale to a meal. Alternative flavor additions, such as almond extract, brandy, or orange liqueur, can subtly alter the profile for variety.

  • 2 cups raspberry 12 ounce package, Driscoll's brand
  • 2 tablespoons granulated sugar
  • 2 cups whipping cream
  • ¼ cup confectioners sugar powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Puree 1 ½ cups of the Driscoll's raspberries in a food processor or blender with the 2 tablespoons of granulated sugar.
  2. In a large bowl, add the cream, confectioners sugar and vanilla extract. Mix with an electric hand mixer or whisk by hand until stiff peaks form.
  3. With a rubber spatula, gently fold in ¾ of the pureed raspberries into the whipped cream mixture, leaving visible swirls. Gently fold in the rest of the puree but be careful not to overmix. Spoon the fool into 4-6 glass cups or small bowls. Top with additional raspberries and serve.

Notes

  • Consider experimenting with almond extract, a tablespoon of brandy, or orange-flavored liqueur to enhance the cream's flavor.
