Description

This sauce uses whole milk combined with sugar and a slurry of cornstarch mixed with a small portion of that milk to prevent lumps. Real vanilla bean pods are split and scraped to incorporate the seeds and pods directly into the warm milk mixture, infusing the sauce with authentic vanilla aroma. The mixture simmers gently while stirring continuously, thickening as the cornstarch activates without curdling.

The resulting sauce has a thinner consistency than some custards but thickens slightly upon cooling. It can be served warm or at room temperature, complementing various desserts such as fruit dishes, puddings, or cakes without overpowering them with sweetness or thickness.

  • 1 pint milk whole
  • 3 tbsp sugar
  • 1.5 tbsp cornstarch
  • 1 whole vanilla bean

Instructions

  1. Take 1-2 tbsp of milk from the original pint of milk and add it to the cornstarch. Mix together to make a slurry. Make sure there are no lumps.
  2. Put the egg yolk, sugar and the remainder of the milk into a pot. Warm this mixture over a low to medium heat.
  3. On a chopping board and with a firm grip on the vanilla bean, slice it lengthways. Lay each half length flat on the board and scrape out the pods using a paring knife. Transfer these pods to the pot.
  4. Add the cornstarch slurry to the pot. The pot contents will start to thicken as the sauce forms. Keep stirring gently and continuously. Simmer for a minute and then remove from the heat.

Notes

  • This sauce has a thinner consistency than most vanilla sauces and will thicken further upon cooling.
  • Stir continuously during cooking to avoid lumps and ensure a smooth texture.
  • Use the sauce warm or at room temperature as an accompaniment to desserts.
