Recipe for Rote Grutze (German Red Fruit Pudding Dessert)

Rote Grütze is a traditional German dessert made by gently cooking a mixture of red fruits with fruit juice and thickening it into a pudding using cornstarch. It features a bright, slightly tart flavor from the berries and cherries, and a smooth, thickened texture that can be served warm or at room temperature. This dessert highlights the natural sweetness and color of red fruits in a simple preparation.

Description

Rote Grütze involves simmering red fruit juice until slightly reduced, then adding a combination of strawberries, raspberries, and cherries, which can be fresh, frozen, or canned. The fruits are gently cooked to soften but still retain some texture, with raspberries added later to prevent overcooking. Cornstarch mixed with water creates a slurry that is stirred into the fruit mixture to thicken it evenly without lumps. Once thickened, the pudding is cooled before serving.

The dessert can be spooned into individual jars or dishes and served warm or at room temperature depending on preference. Its balance of juicy fruit pieces and smooth, mildly sweetened sauce makes it a pleasant finish to a meal or a light snack. The use of various red fruits and juice provides a slightly tart and fruity character that distinguishes this pudding from other desserts.
