This 3-ingredient watermelon smoothie is next-level refreshing! And with fresh mint and cucumber, it’s basically a spa day in a glass. Whip it up in 5 minutes for the easiest (and most delish) way to cool off on hot summer days.

Ingredients
- 2 cups watermelon previously chopped and frozen, 300 g,
- ½ cucumber peeled or unpeeled*
- 2 sprigs of mint
- water as needed
- honey as needed
Instructions
- Blend: Add watermelon, cucumber, and mint leaves to a blender. Blend until smooth, adding water as needed to get things moving. Taste and add honey as needed to suit your liking.
Notes
- To peel or not to peel the cucumber? Peeling it gives the smoothie a more vibrant red color. Leaving the peel on does make it a bit browner but provides more health benefits from the peel (like fiber!).
- To freeze watermelon, lay chopped pieces on a parchment paper-lined sheet in a single layer. Freeze until hard, then transfer to a freezer-safe container or baggie until you need them.
- Storage: I recommend only making enough for what you will drink that day, as the mixture doesn't store well once blended.
