Description
The Rice Pudding is made by baking pudding rice, whole milk, light brown sugar, cinnamon, and vanilla extract together in a greased oven-proof dish at a low temperature for about two hours. This slow baking method softens the rice grains fully while the sugars and spices infuse the milk, creating a naturally thickened, creamy texture.
Butter applied to the baking dish prevents the pudding from sticking during the long bake. The inclusion of cinnamon and vanilla introduces warm, aromatic flavors that balance the sweetness from the brown sugar.
Before serving, stirring in a little cream can add extra richness and silkiness to the pudding. For those looking to avoid dairy, almond or cashew milk can substitute whole milk, though it will affect the pudding's richness and texture.
Ingredients
- 200 g Pudding rice
- 1.4 l milk whole
- 2 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 100 g light brown sugar
Instructions
- Preheat your oven to 165°C/145°C(fan)/325°F/Gas 3. Wash and drain 200 g Pudding rice.
- Grease a large oven-proof baking dish. Add the rice, 100 g Light brown sugar, 1 teaspoon Cinnamon, 1.4 l Whole milk and 2 teaspoon Vanilla extract. Stir well.
- Put in the oven and cook for 2 hours.
Notes
- Grease the baking dish thoroughly with butter to prevent sticking during the long baking process.
- For a richer pudding, stir in some cream just before serving.
- To make a dairy-free version, swap whole milk with almond or cashew milk; expect a thinner consistency and different texture.
