These cinnamon roasted apple slices are full of flavor and can be enjoyed alone, over pancakes, with ice cream or topped with whipped cream.

Ingredients
- 4 large granny smith apples cored and sliced
- 2 tablespoons light brown sugar
- 1 teaspoon cornstarch
- 1 teaspoon cinnamon
- 2 tablespoons butter melted
- ½ vanilla bean pod or 1 ½ teaspoons vanilla extract
- ½ cup Chopped Pecans optional
- vanilla ice cream for serving

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl, combine the brown sugar, with the cornstarch and cinnamon. Add the butter, vanilla, and stir to combine.
- To the mixture, add the sliced apples, and toss to combine the apples thoroughly coated with the sugary mixture.
- Spread the apple mixture on the parchment-lined baking sheet. Bake until tender, for about 25-30 minutes.
- Remove from the oven and serve over vanilla ice cream and top with chopped pecans.
