Roasted Brussels Sprouts Pizza Recipe
Description
The recipe begins by roasting halved Brussels sprouts tossed in olive oil and salt until slightly browned. Simultaneously, thinly sliced red onions are caramelized in olive oil with a pinch of sugar to develop sweetness and softness.
The pizza dough is prepared on baking sheets or pans and drizzled with olive oil and Parmesan cheese. Roasted Brussels sprouts, caramelized onions, and crumbled blue cheese are added as toppings before baking for 12-15 minutes until the crust cooks through and cheeses melt.
Once baked, the pizza is finished with a drizzle of balsamic glaze and a sprinkle of fresh Italian parsley to add brightness and contrast. This pizza offers a layered flavor with crisp vegetables, gooey cheeses, and a touch of acidity from the glaze.
The notes mention the pizza dough requires an 18-hour rise for best results, emphasizing planning ahead for optimal crust texture.
Ingredients
- 2 pizza crust see notes
- 1 lb Brussels sprouts cut in half
- 2 tablespoons olive oil divided, plus more for drizzling on the pizza
- 1 large red onion thinly sliced
- 1 pinch sugar
- ½ cup Parmesan Cheese
- 1 cup blue cheese crumbled
- balsamic glaze to serve
- Italian parsley to serve
Instructions
- Preheat your oven to 425 degrees. Line a baking sheet with parchment paper. Toss the brussels sprouts with 1 tablespoon of olive oil and a pinch of salt and toast them for 15 minutes.
- While the brussels are roasting, prepare the caramelized onions. Add the red onion plus the remaining tablespoon of olive oil to a large frying pan over medium-high heat. Let the onions cook until they are soft, then lower the heat to medium-low, sprinkle a pinch of sugar over the top, and let the onions caramelize for another 5 minutes.
- Arrange the pizza dough onto baking sheets or a pizza pan. Drizzle the top of the crust with olive oil then sprinkle the parmesan cheese over top. Add the onions and brussels sprouts then dot with blue cheese.
- Bake the pizza for 12-15 minutes, until the cheese has melted and the crust is cooked. Serve the pizza with a little parsley on top and drizzled with balsamic glaze. If you'd like, you can add a little more blue cheese before serving.
Notes
- Allow the pizza dough to rise for 18 hours as recommended to develop flavor and texture before using.
