  • 1 lb Brussels sprouts cut in half
  • 2 tablespoons olive oil divided, plus more for drizzling on the pizza
  • 1 large red onion thinly sliced
  • 1 pinch sugar
  • ½ cup Parmesan Cheese
  • 1 cup blue cheese crumbled
  • balsamic glaze to serve
  • Italian parsley to serve

Instructions

  1. Preheat your oven to 425 degrees. Line a baking sheet with parchment paper. Toss the brussels sprouts with 1 tablespoon of olive oil and a pinch of salt and toast them for 15 minutes.
  2. While the brussels are roasting, prepare the caramelized onions. Add the red onion plus the remaining tablespoon of olive oil to a large frying pan over medium-high heat. Let the onions cook until they are soft, then lower the heat to medium-low, sprinkle a pinch of sugar over the top, and let the onions caramelize for another 5 minutes.
