Roasted Curry Cauliflower – healthy roasted cauliflower with butter and curry powder. Takes 10 mins prep time for this amazing side dish.

Ingredients
- 8 oz (230g) cauliflower florets
- 2 tablespoons butter melted
- 1 teaspoon Indian curry powder
- 1 pinch salt
- 3 dashes ground black pepper
Instructions
- Preheat the oven to 400°F (207°C).
- Mix the melted butter, curry powder, salt, and pepper together. Add the cauliflower to the curry mixture and toss to coat well.
- Transfer the cauliflower to a baking sheet lined with parchment paper in a single layer. Roast for 20 minutes and serve immediately.
Notes
- You can top the cauliflower with 1/3 cup grated Parmesan cheese and bake for 5 minutes longer.
