Roasted Curry Cauliflower

  • 8 oz (230g) cauliflower florets
  • 2 tablespoons butter melted
  • 1 teaspoon Indian curry powder
  • 1 pinch salt
  • 3 dashes ground black pepper

Instructions

  1. Preheat the oven to 400°F (207°C).
  2. Mix the melted butter, curry powder, salt, and pepper together. Add the cauliflower to the curry mixture and toss to coat well.
  3. Transfer the cauliflower to a baking sheet lined with parchment paper in a single layer. Roast for 20 minutes and serve immediately.

Notes

  • You can top the cauliflower with 1/3 cup grated Parmesan cheese and bake for 5 minutes longer.
