Roasted Raspberry Crostini

This delicious Roasted Raspberry Crostini recipe is made with balsamic vinegar, mascarpone cheese on top of a baguette. The perfect summer appetizer.

Ingredients

Servings
  • 2 Pints raspberries
  • 1/4 cup balsamic vinegar
  • 1-2 tablespoons sugar
  • 8 oz mascarpone cheese
  • leaves basil chopped
  • balsamic glaze
  • 1/2 baguette cut into 1" slices

Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. In a bowl mix the raspberries, sugar, and balsamic vinegar
  3. Place this mixture on a sheet pan and bake for 15 minutes or until the raspberries are tender and the balsamic vinegar has evaporated
  4. Toast the baguette in the oven for 5-8 minutes
  5. Place the baguette slices on a platter, top with mascarpone cheese, roasted raspberries, basil leaves and a bit of balsamic glaze.
