Ingredients
- ¼ cup almonds
- 1 roasted red pepper
- ½ cup Greek yogurt, plain
- 4 ounces cream cheese, softened
- 1 tablespoon maple syrup (optional, use more to taste if desired)
- 1 tablespoon olive oil
- ½ teaspoon salt

Instructions
- Soak almonds in water for 1 hour or overnight. Drain and discard the water.Note: If not using almonds immediately, refrigerate and use within 2 days.
- Add soaked almonds and remaining ingredients to a blender and blend until smooth.
- Refrigerate dip at least 10 minutes before serving.
- Serve with crackers, vegetables, or fruit.
- Store in the fridge, and use within 10 days.
Notes
- Yields approximately 1 cup of dip.
