This Roasted Tomatoes recipe is ridiculously easy to make and so versatile you’ll wonder how you ever lived without it. The tomatoes turn into the perfect side dish, or they can be used in so many different ways.

  • 2 lb medium tomatoes halved
  • 2 tablespoon olive oil
  • ½ c panko breadcrumbs
  • 2 cloves garlic pushed through a garlic press
  • ¼ c parsley chopped
  • salt
  • pepper

Instructions

  1. Preheat the oven to 400 F and grease a 9 by 13 rimmed baking dish.
  2. In a small bowl, combine breadcrumbs, garlic, olive oil, parsley, salt and pepper to taste.
  3. Place the tomatoes in a baking dish, cut side up. Sprinkle the tomatoes with a pinch of salt and pepper.
  4. Top each tomato half with about a teaspoon of breadcrumbs mixture.
  5. Bake for 30-35 minutes until the breadcrumbs are slightly brown.
  6. Remove the tomatoes from the oven and serve immediately.

  • These roasted tomatoes are best made with medium-sized tomatoes. They are easier to handle and cook more evenly.
  • Using Panko breadcrumbs gives the tomatoes a delicious crunch. You can also use regular breadcrumbs, but Panko is recommended for its texture.
  • Push the garlic through a garlic press for a finer texture. This ensures that it's evenly distributed and doesn't overpower the other flavors.
  • Fresh parsley is always a good choice for this recipe, but you can also use dried parsley if that's what you have on hand.
