Rumkugeln - German Rum Balls

Rumkugeln, or German rum balls, combine melted milk and dark chocolate with butter, powdered sugar, and dark rum, chilled until firm enough to roll into bite-sized balls. Coated with chocolate sprinkles or cocoa powder, these no-bake confections offer a dense, rich texture and a balanced sweetness with a subtle rum flavor. They are easy to prepare ahead and make appealing treats for parties or dessert trays.

Description

Rumkugeln - German Rum Balls bring together equal parts milk and dark chocolate melted smoothly with room temperature butter and powdered sugar, enhanced by a good measure of dark rum for depth of flavor. After mixing, the batter is chilled to develop a firm texture suitable for rolling. The balls are then coated in chocolate sprinkles, cocoa powder, or finely chopped nuts for added texture. The chilling process helps the flavors meld and makes handling simple. These rum balls serve as a rich, indulgent candy with a soft yet slightly firm bite, making them ideal for festive occasions or as a homemade sweet gift.

The use of both milk and dark chocolate creates a nuanced chocolate base, while the rum adds a classic aromatic warmth without overpowering the sweetness. Rolling in sprinkles or nuts adds a pleasant outer texture, contrasting the smooth interior. They keep well refrigerated in an airtight container, making them convenient for preparing in advance and serving as needed.

Ingredients

Servings
  • 6 oz. milk chocolate 170g
  • 6 oz. dark chocolate 170g
  • ½ cup butter at room temperature, 115g, unsalted
  • 1 cup powdered sugar 120g, icing sugar
  • 4 tablespoons dark rum
  • ½ cup chocolate sprinkles jimmies, or cocoa powder or finely chopped nuts - for rolling

Instructions

  1. Chop the chocolate then melt it together either using a double boiler on the stovetop, stirring until smooth, or microwave it in short intervals, stirring between each interval until fully melted. Once the chocolate has melted, let it cool to room temperature.
  2. Add the room temperature butter to a medium mixing bowl and sift in the powdered icing sugar. Beat until light and fluffy.
  3. Beat in the melted chocolate and rum.
  4. Cover the bowl and chill in the refrigerator for at least an hour.
  5. Tip: If the chocolate mixture is not firm enough to roll after chilling, beat in a little more powdered sugar and chill again.
  6. Pour the sprinkles (or cocoa powder) into a shallow dish.
  7. Roll the rumkugeln mixture into small bite-sized balls (using a teaspoon or melon baller). Roll into balls, then roll in the sprinkles (or cocoa powder).
  8. Place onto a plate. Repeat until all of the rum ball mixture is used up.
  9. Store in an airtight container in the refrigerator or in a cool place for up to 3 weeks. For the best flavor, let them come up to room temperature before serving.
