Samosas Recipe from Scratch
Description
The recipe for Samosas from Scratch begins with a stiff dough prepared from all-purpose flour mixed with ajwain seeds and salt, combined with oil and enough water to knead into a firm ball. The dough rests before being divided and rolled into half-circles that form the samosa shells.
The filling blends mashed cooked potatoes, green peas, coriander, garam masala, amchur, salt, and lemon juice, enriched with a tempering of cumin seeds, ginger, and green chili cooked briefly in oil. The potato mixture is placed into the dough cones, which are sealed and shaped.
Cooking is typically done by frying in oil until golden and crispy. This combination results in savory samosas with a spiced, tender potato filling encased in a crunchy exterior, often served as a snack or appetizer.
