Sanwin Makin

Sanwin makin is a delicious traditional Burmese cake prepared with coconut cream and semolina, often served in a diamond-shape.

Ingredients

  • 1 cup fine semolina flour
  • 1 cup caster sugar
  • 3 cups coconut cream
  • 4 tablespoons clarified butter (or unsalted butter), melted
  • 4 egg
  • 1 pinch salt
  • ½ teaspoon ground cardamom

For the garnishing

  • 2 tablespoons sesame seed golden

Equipment

  • baking dish (12x8 inches/30x20cm)

Instructions

  1. Preheat oven to 320F/160C.
  2. In a large nonstick saucepan, mix the semolina with the coconut cream by adding coconut cream one cup (250ml) at a time and stirring well while incorporating.
  3. Add the caster sugar and continue stirring.
  4. Bring to a boil over medium heat, stirring constantly.
  5. When the mixture begins to thicken, add the butter and mix well.
  6. Stop cooking when the dough pulls away from the sides of the pan. Add salt, ground cardamom and mix.
  7. Separate the whites from the egg yolks.
  8. Stir the yolks in the preparation, one by one, mixing well after adding each yolk.
  9. Beat the egg whites until stiff and gently incorporate them into the preparation.
  10. Pour into a baking pan lined with parchment paper and bake for 45 minutes in the preheated oven.
  11. Sprinkle with sesame seeds right out of the oven.
  12. Sanwin makin can be unmolded and eaten warm or cold. Cut into diamond shapes before serving.
