Ingredients
- 12 oz chicken sausage usually 1 package is close to that
- 2 zucchini squash medium sized
- 1 large red onion
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning or 1 teaspoon each parsley, basil, oregano.
- ½ teaspoon salt
- ½ teaspoon pepper
- fresh parsley optional
Instructions
- Preheat oven to 400 degrees F.
- Slice the sausage and zucchini so they are approximately the same thickness, about ¼ of an inch thick.
- Chop the onion so the pieces are approximately the same size as the sausage and zucchini.
- On a baking sheet, toss with olive oil, Italian seasoning, salt and pepper.
- Spread into a single layer.
- Bake for 10-15 minutes, until everything is slightly browned.
- Garnish with fresh parsley.
