Sfenj (Moroccan Donuts)

Sfenj are Moroccan donuts made from a yeast-leavened dough fried until golden brown. The dough is mixed to a smooth, elastic consistency and allowed to rise before shaping into rings with a hole in the center. Frying in hot oil develops a crisp exterior and soft, airy interior typical of these traditional treats. Finished donuts are often dusted with sugar to add sweetness and texture contrast.

Description

Sfenj starts by activating dry yeast with sugar and lukewarm water, creating a fermenting liquid that helps leaven the dough. Salt and some flour form the base, to which the yeast mixture is added, first yielding a thin batter. Additional flour is mixed in using a stand mixer to form an elastic dough, which is kneaded until smooth. The dough rises until doubled, then is portioned and shaped into rings by punching holes in the center.

The rings are fried gently in neutral cooking oil heated to a medium-low temperature, allowing the dough to cook through and develop a golden crust without burning. This method results in donuts that are crisp on the outside and soft and airy within. Finally, the donuts are coated with sugar, adding a sweet crunch to the surface.

  • 2 tsp yeast dry
  • 1 1/2 cups water lukewarm
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 3 cup flour
  • neutral cooking oil for frying, generic cooking oil
  • 1/2 cup sugar topping

Instructions

  1. Stir the yeast and sugar into the water and let the mixture sit for a few minutes until all the yeast is dissolved.
  2. Combine the salt with 1 cup of flour in a mixing bowl. Make a well in the middle of the flour and add in the yeast and water mixture. Mix the liquid into the flour until it turns into a thin batter. Cover with a cloth and let it sit for 30 minutes.
  3. Using an electric stand mixer, gradually stir in the remaining flour until you get a soft dough. Knead the dough until smooth and elastic.
  4. Cover the dough with a towel again and let it sit for an hour, or until it doubles in size.
  5. Place the dough on a floured surface and stretch it into a long log. Divide the log into 20 even pieces.
  6. With your finger, punch out a hole in the middle of one of the dough pieces. Repeat until all the dough pieces have a hole in the center.
  7. Heat the oil until it begins sizzling over medium-low heat. Drop the donuts in one-by-one into the oil, cooking until golden on each side.
  8. Lift the donuts out with a skewer and place them on a paper towel lined plate. Toss the donuts in sugar when they are still warm.
