Sfouf

Sfouf is a traditional Lebanese dessert cake made with almonds and semolina, and flavored with turmeric, tahini, anise and pine nuts.

Ingredients

Servings
  • cups fine durum wheat semolina
  • 1 cup all-purpose flour
  • 2 tablespoons Turmeric ground
  • 2 cups milk whole
  • cups caster sugar
  • 1 cup vegetable oil
  • 1 tablespoon baking powder
  • 2 tablespoons tahini
  • 1 oz pine nuts

Equipment

  • Stand mixer
  • cake tin (12 x 8 inch / 30 x 20 cm)

Instructions

  1. Preheat the oven to 499 F (200°C).
  2. In the bowl of a stand mixer, combine the semolina, flour, baking powder and turmeric.
  3. In a large bowl, dissolve the caster sugar in the milk, then pour over the semolina mixture.
  4. Using the beater tool, mix everything together at low speed while gradually adding the oil until a smooth batter is obtained.
  5. Brush the bottom and edges of a 12 x 8 inch (30 x 20 cm) lined cake tin with tahini.
  6. Pour in the batter.
  7. Bang the cake tin on the work surface to even out the surface of the cake, and to remove any air pockets.
  8. Sprinkle the pine nuts on top.
  9. Lower the oven temperature to 350 F (180°C), and bake for 25 to 30 minutes until golden brown.
  10. Let cool completely, then cut the sfouf into squares or diamonds.
