Description

Sheer Khurma combines full-fat milk thickened by simmering with vermicelli, dates, almonds, pistachios, and raisins, creating a pudding with layered textures and flavors. The vermicelli is lightly fried in ghee to add nuttiness, while dates and nuts are toasted separately to enhance their aroma. Cardamom powder adds a fragrant note, and optional rose water or saffron strands can be added for additional aroma and color. The pudding thickens as it cools, offering a creamy, sweet dish enriched by the mix of toasted ingredients.

The flavor features the creamy richness of milk sweetened with sugar and the natural sweetness of dates, balanced by crunch from the nuts. Ingredients

  • 2 tablespoon ghee or unsalted butter, divided
  • 8-10 dates soaked overnight, deseeded and sliced, dry
  • 2 tablespoon almonds blanched and slivered
  • 2 tablespoon pistachio thinly sliced
  • 1 tablespoon raisins washed
  • 40 grams vermicelli crushed
  • 1 litre milk full fat
  • 1/2 cup sugar adjust to taste
  • 1/2 teaspoon cardamom powder aka Elaichi

Optional

  • 1 teaspoon rose water
  • 1 pinch saffron can add a few whole making with cardamom powder and some for garnishes, strands

Instructions

  1. Soak dried dates overnight. Then drain in the morning and remove the seed and chop them.
  2. Add 1 tablespoon ghee to a frying pan and allow it to melt. Add dry dates and saute for a minute.
  3. Add almonds, pistachios and raisins. Give it a stir and fry for couple of minutes. Take out and reserve for later.
  4. In the same frying pan, add the remaining ghee & let it melt.
  5. Add vermicelli and fry for 2 minutes. Take out and set aside.
  6. In a wok (or same large pan), add milk and bring it to boil. Then lower heat and cook for 10-15 minutes until milk thickens. Keep stirring at regular intervals. You can use a non-stick pan to avoid the milk from sticking to the pan.
  7. Add reserved toasted dates (save some for garnish), nuts, sugar, cardamom powder, mix well and cook on medium flame for 4-5 minutes, while stirring at regular intervals.
  8. Add toasted vermicelli, mix well and cook for 6-8 minutes until desired consistency. However turn off the flame just before you see the perfect consistency, as sheer khurma thickens as it cools.
  9. Garnish with roasted nuts, dried rose petals & serve!

Notes

  • Use whole milk to achieve a rich and thick pudding consistency.
  • Toast nuts and dates before adding them to enhance their flavor.
  • Adjust sugar amount to taste or add more dates for natural sweetness.
  • The pudding thickens as it cools; add milk if it becomes too thick.
  • Rose water and saffron strands can be added optionally for aroma and color.
  • To save time, fresh Medjool dates can substitute soaked dry dates.
