Sheet Pan Salmon with Green Beans & Potatoes

We love that you can make a full meal all on one pan! This sheet pan dinner consists of flaky salmon, tender potatoes, and roasted green beans - all with minimal prep and clean up!

Ingredients

  • 2 pounds baby red potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 ½ pounds salmon cut into 4 filets
  • 1 pound fresh green beans ends trimmed
  • 1/3 cup butter melted
  • 3 cloves garlic minced
  • 1 tablespoon minced parsley
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon cracked pepper
  • 4 lices lemon
  • fresh parsley for garnish

Instructions

  1. Preheat oven to 400 degrees. Spray a large rimmed half sheet with non-stick spray.
  2. Quarter the potato and place in a mixing bowl. Drizzle with the olive oil, Italian seasoning, garlic powder, and salt. Toss to coat.
  3. Arrange potatoes in an even layer on the baking sheet.
  4. Bake for 15 minutes and then remove from the oven and push the potatoes to one side of the pan.
  5. Arrange the salmon down the center of the pan and the green beans along the other edge of the pan.
  6. Add the melted butter, garlic, parsley, onion powder, salt, and pepper to a small bowl. Stir to combine.
  7. Drizzle the butter mixture evenly over the salmon and green beans. Gently toss the beans to coat. Place lemon slices over the salmon.
  8. Return to the oven and bake for 15 minutes more or until salmon is cooked through and potatoes and beans are tender.
  9. Garnish with parsley and serve.

Notes

  • The green beans should be tender-crisp after 15 minutes. For more tender green beans, add them with the potatoes so that they roast for longer.
