Sheet Pan Sausage and Veggies

This almost 30 minute meal all cooks up on one sheet pan for minimal clean up and prep. It's easy to change up the seasonings to suit your tastes, making this meal one you can make again and again and not get sick of it!

Ingredients
- 2 large sweet potatoes
- 16 ounces smoked sausage
- 12 ounces broccoli florets
- 2 tablespoons olive oil
- 1 1/2 teaspoons creole seasoning see note
Instructions
- Preheat the oven to 400 degrees.
- Peel and dice the sweet potatoes into ½ inch small cubes. Slice the sausage into ½ inch rounds.
- Add the potatoes, sausage, and broccoli to a mixing bowl and drizzle with the olive oil. Sprinkle with the creole seasoning. Toss to coat.
- Spread onto a rimmed baking sheet and bake for 25 minutes, stirring halfway through cooking, or until potatoes are tender and broccoli is as roasted as you’d like.
- Serve hot.
Notes
- We use Tony Chachere’s Creole Seasoning. It’s quite salty so we do not add additional salt. Once baked, taste the mixture and season with additional Tony’s or salt and pepper if desired.
- If you’re using a Cajun seasoning that is not salty, you may want to add salt and pepper during baking.
- Be sure to cut the sweet potatoes into 1/2 inch cubes so that they cook through in the alloted time. If they're larger chunks, you'll want to bake them for a bit before adding the other ingredients.
- We like to serve this over a bowl of rice.
- This is great for meal prep and reheats great in the microwave!
