This quick and easy sheet pan dinner loads in the flavor with smoked sausage, a medley of fresh vegetables and a rich cajun butter sauce!

Ingredients
- 1 pound smoked sausage cut into 1/2-3/4 inch slices
- 3-4 Yukon gold potatoes cut into 1 inch chunks
- 4 ounces green beans
- 1 yellow bell pepper cut into 1 inch pieces
- 1/2 purple onion roughly chopped
For the Cajun Butter Sauce
- 1/4 cup butter melted
- 2 tablespoon chopped fresh parsley plus more for garnish
- 1.5 teaspoons Cajun Seasoning

Instructions
- Preheat the oven to 400˚F.
- Mix to combine the melted butter, parsley and cajun seasoning.
- Spread the sausage, potatoes, green beans, onion, and bell peppers in a single layer on a large sheet pan (or 2 smaller ones.)
- Drizzle the butter sauce over the sausage and vegetables and toss to coat them on all sides.
- Bake for 20-25 minutes or until the potatoes are fork tender. Garnish with additional fresh parsley and serve immediately. Enjoy!
Notes
- To freeze:
- Place sliced sausage, vegetables and potatoes in a freezer bag. Once ready to cook, thaw, and toss in butter sauce, then bake as directed.
