Sheet Pan Sausage & Veggies with Cajun Butter Sauce

This quick and easy sheet pan dinner loads in the flavor with smoked sausage, a medley of fresh vegetables and a rich cajun butter sauce!

Ingredients

Servings
  • 1 pound smoked sausage cut into 1/2-3/4 inch slices
  • 3-4 potato cut into 1 inch chunks, Yukon gold variety
  • 4 ounces green beans
  • 1 yellow bell pepper cut into 1 inch pieces
  • 1/2 purple onion roughly chopped

For the Cajun Butter Sauce

  • 1/4 cup butter melted
  • 2 tablespoon parsley plus more for garnish, chopped, fresh
  • 1.5 teaspoons Cajun seasoning

Instructions

  1. Preheat the oven to 400˚F.
  2. Mix to combine the melted butter, parsley and cajun seasoning.
  3. Spread the sausage, potatoes, green beans, onion, and bell peppers in a single layer on a large sheet pan (or 2 smaller ones.)
  4. Drizzle the butter sauce over the sausage and vegetables and toss to coat them on all sides.
  5. Bake for 20-25 minutes or until the potatoes are fork tender. Garnish with additional fresh parsley and serve immediately. Enjoy!

Notes

  • To freeze:
  • Place sliced sausage, vegetables and potatoes in a freezer bag. Once ready to cook, thaw, and toss in butter sauce, then bake as directed.
