Sheet Pan Sausages and Veggies Recipe

This Sheet Pan Sausages and Veggies Recipe roasts a combination of colorful chopped vegetables, baby potatoes, and sausage slices together with Italian seasoning, olive oil, salt, and pepper. The result is a hearty, savory dish with tender roasted veggies and browned sausage, served optionally with Parmesan cheese to add richness.

Description

The recipe uses an assortment of vegetables such as broccoli, carrots, onion, green beans, and bell peppers along with cubed baby potatoes. These are tossed in olive oil and Italian seasoning, then arranged on a large baking sheet. Thickly sliced sausages are placed on top before roasting at 425°F until the vegetables are tender and the sausage is browned. The high heat promotes caramelization for enhanced flavor and texture. The optional addition of grated Parmesan cheese adds a savory finish.

This dish can serve as a complete meal or a substantial side alongside other dishes. The combination of sausages and various vegetables offers balanced flavors and textures. The recipe is flexible concerning the type of sausage used, suiting personal preferences or what is available.

The quantities provide enough for a light dinner for four or a filling meal for three. It can be adapted by increasing the sausage quantity to satisfy heartier appetites.

  • 1 tablespoon olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt sea salt
  • 1 teaspoon black pepper sea salt
  • 4 sausages cut into 2" thick circles (see notes)
  • Parmesan Cheese for serving, optional, grated

Instructions

  1. Preheat your oven to 425 degrees. For easy cleanup, line a baking sheet with parchment paper. Use a large baking sheet (minimum 18x13 inches) or divide everything between 2 smaller baking sheets.
  2. Add the vegetables and potatoes to the baking sheet. Drizzle with the olive oil then sprinkle the Italian seasoning, salt, and pepper over top. Use your hands to mix the oil and seasonings into the veggies.
  3. Scatter the sausages on top of the veggies then put the pan into the oven. Bake for 20 minutes, or until the veggies are roasted to your liking and the sausages are browned.
  4. If using, grate some parmesan cheese over the sausages and veggies before you serve them.

Notes

  • Use mild or spicy Italian sausages according to preference, or swap in any favorite sausage variety.
  • The recipe yields enough to serve four with light portions or three with more filling servings.
  • Adding extra sausages to the pan is a simple way to increase the protein portion if desired.
