- 2 cups pineapple cubed, fresh

- 1 green bell pepper medium, diced
- 2 sweet potatoes small (8 ounces each), peeled, diced into 1-inch cubes
- 1 tablespoon sesame oil toasted
- 1 teaspoon canola oil
- 1 tablespoon coconut palm sugar or brown sugar
- 1 tablespoon coconut unsweetened, shredded
- 1 tablespoon lime juice
Instructions
- Heat oven to 400 degrees F.
- Line a rimmed baking sheet with aluminum foil and spray with cooking spray.
