Shirataki Noodles Recipe with a Peanut Sauce
Description
This recipe highlights angel hair shirataki noodles known for their low-calorie, translucent strands. After rinsing and drying, they are stir-fried with crunchy vegetables such as broccoli florets, cherry tomatoes, julienned carrot, and chopped onion for freshness and texture. The peanut sauce combines coconut milk with natural peanut butter, soy sauce, tomato paste, minced ginger, lime juice, red curry paste, sriracha, and garlic, simmered briefly to thicken and meld flavors.
The resulting sauce is creamy with a balance of nuttiness, mild heat from the curry and sriracha, freshness from lime juice, and aromatic ginger and garlic. The noodles absorb this sauce lightly, offering a slippery, delicate mouthfeel that contrasts with the crisp vegetables.
