Make Air Fryer Shrimp Egg Rolls! These crispy delights are packed with shrimp and veggies. Perfect as a snack or party appetizer.

Ingredients
- 1 tablespoon sesame oil divided
- ½ pound Shrimp fresh or frozen
- 2 cloves garlic minced
- 2 green onions diced
- 3 cups coleslaw mix
- 2 tablespoons soy sauce
- ½ tablespoon rice vinegar
- 6 egg roll wrappers

Instructions
- Heat half of the oil in a skillet over medium heat. Add the shrimp and cook, stirring, until pink. This will take about 5 minutes if the shrimp is frozen and 2 minutes if it is fresh.
- Remove the shrimp and add the rest of the oil to the skillet.
- Add the garlic, green onions, coleslaw mix, soy sauce, and rice vinegar to the skillet and cook for 5 minutes, until the veggies soften.
- Dice the shrimp into small pieces and return them to the skillet. Stir to mix.
- Place an egg roll wrapper on a clean work surface. Add ⅓ cup of the shrimp filling to the top of the wrapper. Fold the top point over the top, then fold in the sides. Continue to roll the egg roll up, folding in the sides as you go.
- Brush the end of the wrapper with water to seal it tightly. Set the egg roll aside and make the remaining ones.
- Preheat the air fryer to 400 degrees F.
- Place the egg rolls in the basket or tray of your air fryer and brush all sides of each egg roll with vegetable oil or spray with oil.
- Air fry the egg rolls for 10 minutes, flipping halfway through the cooking time.
Notes
- If you don't have an air fryer, put the egg rolls on a cookie sheet and bake in a preheated oven at 400F for 15-20 minutes.
- Keep your egg roll wrappers under a damp paper towel while you're working to prevent them from drying out.
- Rolling egg rolls can seem intimidating the first time you do it. But it is actually pretty simple; just try it and don't worry about it.
- Don't skip preheating the air fryer.
