Shrimp in Lobster Sauce

Shrimp in Lobster Sauce combines tender shrimp cooked with garlic, peas, and carrots in a thickened soy-based sauce enriched by beaten egg for a velvety texture. The cooking sherry and cornstarch help lightly coat the shrimp for a succulent bite. The sauce develops with a balance of salty, slightly sweet, and savory flavors, making it suitable as an entrée served over rice or noodles.

Description

Shrimp in Lobster Sauce is a dish featuring large peeled and deveined shrimp that are tossed with cooking sherry and a bit of cornstarch before sautéing in vegetable oil. The sauce is built from soy sauce, garlic, sugar, salt, and water thickened with cornstarch, then combined with peas and diced carrots to add color and mild sweetness. Incorporating the beaten egg by drizzling it into the sauce while stirring creates delicate strands that help thicken and enrich the sauce with a silky texture.

The shrimp are returned to the pan at the end to warm through and absorb the flavors. This preparation highlights a slightly sweet, savory sauce coating tender shrimp and crisp-tender vegetables. It pairs well with steamed rice or noodles, providing a balanced meal with protein and vegetables.

Preparing the sauce separately while cooking the shrimp ensures even cooking and preserves shrimp texture. Drizzling in the egg carefully prevents clumping for a smooth finish.
