Shrimp Tortellini Recipe

Shrimp Tortellini combines tender cheese tortellini with shrimp and baby spinach in a creamy sauce made from chicken stock, heavy cream, and cream cheese. The sauce is gently simmered with sautéed onion and garlic, imparting a rich, smooth texture and a fresh lemony brightness from zest and juice. The result is a comforting pasta dish balancing seafood, greens, and a silky, tangy sauce.

Description

The recipe starts by cooking cheese tortellini until tender, then setting it aside. Meanwhile, butter is melted to sauté minced onion and garlic until soft and translucent, forming the flavor base. Chicken stock, heavy cream, and cream cheese are added and heated until smooth and simmering, creating a creamy sauce with a subtle tang and richness.

Shrimp is cooked briefly in the simmering sauce to retain its juiciness and blend with the cream, then baby spinach is folded in to wilt slightly, adding freshness and color. Finally, cooked tortellini is combined with lemon zest and juice, imparting brightness that cuts through the richness. Seasoning with salt and pepper finishes the dish.

This pasta works well as a main course and can be served immediately for best texture. The balance between creamy sauce, tender pasta, lightly cooked shrimp, and fresh spinach creates a satisfying, nuanced dish without heavy seasoning or complicated steps.
