Six Banana Bread Recipe

This banana bread features six medium bananas for a moist texture, combined with both granulated and brown sugars for balanced sweetness. With all-purpose flour and baking soda, it rises into a tender loaf studded with chocolate chips for added richness. The recipe includes sour cream and melted butter to enhance moisture and crumb, along with vanilla for aroma. Optional sliced banana on top adds a decorative finish. Baking time is longer than average to ensure full doneness with a set, non-giggly top.

Description

The Six Banana Bread Recipe creates a moist and tender loaf using six medium mashed bananas mixed with other wet ingredients including eggs, sour cream, melted butter, and vanilla. The starch structure is provided by all-purpose flour combined with baking soda and a pinch of salt to balance flavor. Brown and granulated sugars contribute sweetness and a subtle molasses note.

The batter is folded gently after mixing to incorporate chocolate chips without overworking the flour. The optional banana slice pressed on top provides a visual accent and slight caramelization. Baking at 350°F for around 60 to 75 minutes allows the inner crumb to fully cook without over-browning the crust, with a foil tent applied if needed.

The bread slices well when cooled and makes a good breakfast or snack option. Its moist texture and chocolate chips appeal to banana bread lovers who prefer a richer loaf. Including sour cream helps retain moisture and adds slight tanginess balancing the sweet bananas.

Measuring the bananas accurately ensures consistent batter moisture; adjust sour cream accordingly if banana quantity varies. An instant-read thermometer reading 205°F confirms doneness. Checking the bread starting at 60 minutes helps avoid underbaking or dryness.

Ingredients

Servings
  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 6 medium banana 2 cups
  • 2 large egg
  • ½ cup sour cream
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ¼ cup butter melted
  • 1 teaspoon vanilla
  • ½ cup chocolate chips
  • banana optional, 1 extra, for decorating the top

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease a 5"x9" loaf pan. In a medium-sized bowl, whisk the flour, baking soda, and salt.
  2. In a large bowl, mash the bananas then whisk in the eggs, sour cream, both the sugars, melted butter, and vanilla.
  3. Mix the dry ingredients with the wet ingredients until they are just combined. Fold in the chocolate chips. Do not over-mix the batter.
  4. Pour the batter into the loaf pan and smooth out the top. Optional: split a banana vertically down the middle then press it into the top of the batter, cut side facing up.
  5. Bake for 60 to 75 minutes, or until a toothpick inserted into the center comes out clean. Check the bread after 45 minutes and if it is golden brown on top, tent it loosely with a piece of foil to prevent it from browning too much. Let it cool for 10 minutes in the loaf pan then remove it and cool it completely on a wire rack before slicing it.

Notes

  • This banana bread takes longer to bake than many recipes; check doneness starting at 60 minutes but expect up to 75 minutes.
  • Use an instant-read thermometer inserted into the top third of the loaf; 205°F indicates it's fully baked.
  • If mashed bananas measure less than 2 cups, add extra sour cream to compensate moisture; if more, reduce sour cream accordingly.
