Skinny Shrimp Scampi Recipe

Skinny Shrimp Scampi features shrimp sautéed in a lemony garlic butter sauce and served over tender zucchini noodles. The shrimp cook quickly with fresh garlic, lemon juice, and zest, then combine with sautéed zoodles tossed with dill and crumbled feta cheese, offering a light yet flavorful alternative to traditional pasta scampi. The dish balances bright citrus, fresh herbs, and creamy cheese with a soft texture from the zucchini noodles.

Description

This Skinny Shrimp Scampi recipe begins by browning garlic in butter and olive oil to develop aroma, followed by adding fresh lemon juice and zest. Large shrimp are seasoned and cooked on each side until opaque and tender, then sprinkled with fresh parsley. The same pan is used to sauté spiralized zucchini noodles lightly seasoned with salt, pepper, fresh dill, and topped with crumbled feta cheese for an added tangy creaminess.

The shrimp have a delicate, citrus-accented garlic flavor, and the zucchini noodles provide a softened, wholesome base that soaks up the savory sauce elements. By cooking all components in one skillet, the dish gains cohesive flavor and avoids extra cleanup. This low-carb meal serves well as a light dinner or lunch.

Ingredients

Servings

For The Shrimp:

  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 lb. Shrimp extra large, deveined, 453 grams (26-30 per pound
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper ground
  • 4 tablespoons lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • ¼ cup parsley chopped, fresh

For Zucchini Noodles:

  • 1 teaspoon olive oil
  • 4 zucchini spiralized, medium size
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper ground
  • ¼ cup dill chopped, fresh
  • ¼ cup feta cheese crumbled

Instructions

  1. To cook the shrimp: Heat butter and vegetable oil in a large skillet over medium heat. Add in the garlic and cook, stirring often, until lightly browned, 30 seconds or so. Add in the lemon juice and zest and cook until it comes to a boil.
  2. Add in the shrimp. Season with salt and pepper.  Each shrimp should be in contact with the bottom of your skillet. If your pan is not large enough, cook them in smaller batches. Cook 2 minutes on each side.
  3. At the last minute, sprinkle shrimp with chopped parsley. Transfer shrimp onto a plate. Do not turn the heat off and do not wash the pan (we will use the same skillet to cook the zoodles).
  4. To cook the zucchini noodles: Heat oil in the same skillet over medium heat. Add in the spiralized zucchini and salt and pepper. Cook, stirring often, until zoodles are softened to your liking. I like mine cooked for 7-8 minutes.
  5. Turn the heat off. Add in the cooked shrimp, fresh dill, and feta cheese in the pan. Give it a gentle toss.
  6. Taste for seasoning and add in if necessary. Serve.
