Ingredients
- 6 ounce chopped baby spinach
- 1 (14-ounce) can chopped artichoke hearts, drained
- 1 (8-ounce) package Greek yogurt cream cheese
- ½ cup low-fat Greek yogurt
- ½ cup light mayonnaise
- 1 ¼ cup shredded mozzarella cheese, divided
- 1 ¼ cup shredded Parmesan cheese, divided
- 1 clove minced garlic
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Instructions
- Preheat oven to 375 degrees Fahrenheit. Spray an 8 x 8 x 2-inch baking dish with non-stick cooking spray.
- In a medium-sized bowl, combine 6 ounce chopped baby spinach, 1 (14-ounce) can chopped artichoke hearts, 1 (8-ounce) package Greek yogurt cream cheese , ½ cup low-fat Greek yogurt, ½ cup light mayonnaise, 1 cup mozzarella cheese, 1 cup parmesan cheese, 1 clove minced garlic, ¼ teaspoon salt, and ⅛ teaspoon pepper. Mix until combined.
- Spoon the artichoke mixture into the prepared pan and top with the remaining ¼ cup mozzarella cheese and ¼ cup shredded mozzarella cheese. Bake for 20-25 minutes until heated throughout and bubbly. Serve immediately.
