Slow Cooker Black Eyed Peas on New Year’s Day are a family tradition we’ve been following for as long as I remember. It’s full of flavor with onion, garlic and ham. It will warm you on a cold winter day, for sure.

Ingredients
- 1 yellow onion diced
- 1 Tbsp minced garlic
- 1 lb Dried Black Eye Peas
- 1 1/2 cups chopped ham
- 5 lices cooked bacon
- 2 ounce cans fire roasted tomatoes
- 7 cups chicken broth
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 Tbsp fresh parsley
Instructions
- Add the dried beans to the slow cooker (no need to pre-soak).
- Add the chopped onion, garlic, black eye peas, bacon, chopped ham, tomatoes and chicken broth in the slow cooker.
- Cover and cook on HIGH for about 7 hours.
- Sprinkle on salt and pepper to taste. Garnish with parsley.
