Slow Cooker Chicken "Tagine"

Just got back from the trip of a lifetime to Morocco, and I've got "tagine" recipe for your slow cooker to share since we absolutely loved the food abroad!

Ingredients

Servings
  • 1 tablespoon paprika
  • 2 teaspoons ginger
  • 2 teaspoons Turmeric
  • 2 teaspoons cumin
  • 2 teaspoons black pepper
  • 1 1/2 teaspoons salt
  • 1 onion peeled and sliced
  • 1 whole chicken cut into parts (back and giblets removed)
  • 1 1/2 pounds potato cut into 1-inch pieces
  • 1 large tomato cored and cut into wedges
  • 1/2 pound green beans trimmed and cut in half
  • 4 large carrot peeled and cut into 1-inch pieces
  • 1 cup pea frozen
  • 1 large zucchini or 2 small
  • 1 ounce jar green olives or 1 cup
  • 3 cloves garlic minced
  • 1/3 cup cilantro fresh
  • 1/3 cup parsley fresh

Instructions

  1. In a small bowl mix together the paprika, ginger, turmeric, cumin, pepper and salt with a fork. Set aside.
  2. Place the onion in the bottom of a slow cooker. Put the chicken parts on top. Sprinkle with half the seasoning mix.
  3. Layer in the potatoes, tomato, green beans, carrots, peas, zucchini, green olives, and garlic. Sprinkle with the remaining spice mix and gently toss the veggies together. 
  4. Top with fresh cilantro and parsley, cover, and cook on high for 4 to 5 hours or until the chicken is tender enough to fall off the bone. Could also cook on low for 7 to 8 hours.
  5. Serve over whole wheat couscous.
