  • cup brown sugar (lightly packed)
  • 3 tablespoon butter cold
  • 2 tablespoon walnuts
  • 2 tablespoon sultanas
  • 1 teaspoon pumpkin spice - see note 1
  • 4 apple see note 2
  • cup water boiling

Instructions

To prepare the filling.

  1. Place the brown sugar into a small bowl.
  2. Cut the butter into small cubes and add to the sugar.
  3. Finely chop the walnuts and add them to the sugar mixture along with the sultanas and pumpkin spice.
  4. Stir to combine.

To prepare the apples.

  1. Cut the very top from the apples.
  2. Use a melon baller to remove the core of the apple, leaving the base intact.
  3. Take a knife and lightly score the skin around the circumference of the apples.
  4. Spoon the filling mixture into the apple, really packing it full and pushing it down.
  5. Place the apples in the slo cooker ensuring they are not touching the edges.
  6. Pour the boiling water around the apples and cook on high for 2 ½ hours.
  7. Serve with cream and spoon over the cooking juices.
