Description

This recipe starts with a cookie dough mixture made from melted butter, white and brown sugars, eggs, vanilla, flour, baking powder, salt, and graham cracker crumbs. Half the dough is pressed into a greased baking dish, topped with chopped milk chocolate bars and marshmallows, then covered with the remaining dough and the rest of the graham cracker crumbs before baking.

Baking melts the chocolate and marshmallows into the dough, creating layers of sweetness and chewy texture that recall the campfire treat. The topping of graham cracker crumbs adds a slight crunch contrasting the soft casserole interior.

The casserole is suitable for serving warm and can be stored for up to a week in an airtight container. Reheating gently in the oven or microwave softens the dessert again. Greasing the pan thoroughly is important to prevent sticking, especially because baked marshmallows can become tacky.

  • 11 tbsp butter melter
  • cup white sugar
  • ½ cup brown sugar
  • 2 tsp vanilla extract
  • 1 egg
  • 1 egg yolk
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • pinch salt
  • cup graham cracker crumbs about 9 whole sheets
  • 1 cup mini marshmallows divided
  • ½ cup chocolate chips mini, semi-sweet
  • 2 milk chocolate bars Hershey's brand, full sized

Instructions

  1. Preheat the oven to 350°F. Melt butter in a glass mixing bowl in 30 second intervals until melted. Add brown sugar and white sugar to the bowl and use an electric mixer to beat until everything is well combined.
  2. Add in the egg+yolk and vanilla extract. Beat again.
  3. Pour the all purpose flour, baking powder, salt, and ⅓ cup graham cracker crumbs to the batter. Mix again until cookie dough forms.
  4. Add in ½ cup of mini marshmallows, chocolate chips, and fold together.
  5. Grease an 8x8 square pan with spray oil or line with parchment paper.
  6. Layer ½ of the cookie dough into the bottom of the prepared pan. Break 1 Hershey’s bar into pieces and spread pieces in an even layer on the dough. Add the remaining ½ cup mini marshmallows and press them into the dough.
  7. Add the remaining cookie dough on top of the chocolate/marshmallow layer. Then press the remaining ⅓ of graham crackers into the top.
  8. Bake for 22-25 minutes.
  9. Remove from the oven and place the remaining Hershey’s Bar pieces onto the top while it’s still hot (they’ll get a little melty and it is DELISH).
  10. Allow the casserole to cool before cutting into squares. Serve with a little vanilla ice cream or whipped cream if desired and enjoy!

Notes

  • Grease or line the baking dish well, as the baked marshmallow becomes very sticky and difficult to remove otherwise.
  • Store the casserole in an airtight container for up to 1 week for best freshness.
  • Reheat gently in a microwave or oven at 300°F for 5-10 minutes to restore softness before serving.
