Soft Gingerbread Cookie Recipe

These Soft Gingerbread Cookies feature a tender dough made with butter, both brown and granulated sugars, molasses, and warm spices including ginger, cinnamon, cloves, and a hint of black pepper. The cookies are rolled in sugar before baking, which adds a delicate crunch on the outside while the inside remains chewy. Baking until just cracked and lightly browned ensures the softness that defines these cookies.

Description

The Soft Gingerbread Cookie Recipe balances sweet and spicy elements through the combination of molasses and a blend of ground spices: ginger, cinnamon, cloves, and a subtle touch of black pepper that enhances warmth without heat. Butter and brown sugar create a rich, moist dough, while the egg and vanilla bind and add flavor depth. The baking soda provides leavening to achieve the ideal chewy texture.

After chilling the dough, forming one-inch balls rolled in granulated sugar results in a slightly crisp exterior once baked. The short baking time is critical to preserve softness; the cookies develop fine cracks and a light browning around edges signaling doneness. Cooling briefly on the baking sheet before transferring prevents breakage.

These cookies offer a classic holiday treat with deep spice notes and a moist crumb. They pair well with tea or coffee and can be decorated or enjoyed as is. Chilling dough ahead aids in handling and improves texture when baked.

Ingredients

Servings
  • 1 ½ butter softened, sticks
  • ¼ cup granulated sugar
  • ½ cup brown sugar packed
  • ¼ cup molasses
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 2 teaspoons ground ginger
  • ¼ teaspoon cloves ground
  • teaspoon black pepper
  • ½ teaspoon salt
  • 2 cups all-purpose flour
  • granulated sugar for rolling

Instructions

  1. Preheat oven to 350°.
  2. In the bowl of a stand mixer fitted with a paddle attachment, cream together the butter and sugars until light and fluffy. Add in the molasses, egg, and vanilla and mix until well-combined.
  3. Add in the baking soda, cinnamon, ginger, cloves, pepper, and salt, and mix until just combined. Add in the flour and mix until well-combined, scraping the sides as needed.
  4. Chill the dough for at least 30 minutes. Then roll the dough into 1-inch balls, and roll each dough ball in granulated sugar. Place on an ungreased baking sheet, spacing them 2-inches apart.
  5. Bake in preheated oven for 7-8 minutes, or until the cookies just begin to crack and crinkle, and the edges barely start to brown. Do not overbake or they won't be chewy!
  6. Let cookies cool for a minute or two on the cookie sheet, then transfer to a wire rack to cool completely.
