Soft Gingerbread Man Recipe
Description
The Soft Gingerbread Man Recipe uses a mix of flour, muscovado sugar, butter, golden syrup, bicarbonate of soda, cinnamon, mixed spice, and ground ginger to form a spiced dough. After melting the butter with sugar and golden syrup and combining with the spiced flour and egg, the dough is gently kneaded and chilled before rolling out to a quarter-centimeter thickness. Baking at a high temperature for about eight minutes allows the cookies to remain soft and chewy instead of hard or crisp. The spices impart a warm, aromatic flavor typical of gingerbread, and the syrup and sugar lend moistness to the dough.
Once baked, the gingerbread men can be decorated with icing to add visual appeal and a touch of sweetness contrast. These cookies are good for holiday treats or cozy snacks when you want a spiced yet pliable cookie texture.
The recipe notes suggest baking only until just soft and chewy; extending the baking time by about five minutes will produce crisper cookies, but careful attention is needed to avoid burning. Ingredient quantities can be adjusted for different servings, and measurements are available in US customary units if preferred.
Ingredients
- 350 g flour
- 175 g muscovado sugar dark brown
- 100 g butter
- 80 g golden syrup or honey
- 1 teaspoon bicarbonate of soda
- 1 tablespoon cinnamon
- 1 teaspoon mixed spice
- 1 ½ tablespoon ground ginger
- 1 egg
- Icing optional, for decorating
Instructions
- Cut the butter in small cubes and put it in a pan over a low heat.
- Add the muscovado sugar and the golden syrup and gently stir until the butter has melted and the mixture is smooth.
- Remove from the heat and set aside to cool.
- In a large pan, sift the flour and add the ground ginger, mixed spice, cinnamon and bicarbonate of soda.
- Crack an egg and beat slightly.
- Make a well in the middle of the flour and add the egg and the buttery mixture.
- Knead gently for a few minutes until it forms a dough.
- Make a ball, cover in cling film and refrigerate for 30 minutes.
- Transfer the dough to the working surface and use a rolling pin to roll the dough, it should have approximately ¼ cm in thickness.
- Use gingerbread cookie cutters to cut out shapes.
- Transfer them onto a baking tray lined with non-stick paper, working in batches.
- Bake in the preheated oven at 200 degrees Celsius (390 degrees Fahrenheit) for about 8 minutes, checking it regularly - depending on your cookie cutter size, they might take between 7-10 minutes
- Allow to cool completely, then decorate with icing if you wish.
Notes
- You can customize the baking time to achieve a soft or crisp texture; add 5 minutes for crisper cookies, watching closely to prevent burning.
- Ingredient quantities can be adjusted based on desired servings; check the US Customary link for cup and ounce measurements.
- Decorating with icing is optional but adds a traditional look to gingerbread men.
