Sopapilla Cheesecake

Sopapilla Cheesecake combines layers of crescent roll dough with a creamy, sweetened cream cheese filling, topped with a cinnamon sugar and butter glaze. Baked until golden and slightly crispy on top, the dessert balances soft, creamy textures with a lightly crunchy topping. It is a sweet treat that works well for gatherings or a special dessert, served cooled to let flavors settle.

Description

Sopapilla Cheesecake uses refrigerated crescent rolls as a quick pastry base layered with a smooth mixture of cream cheese sweetened with sugar and vanilla. After spreading the filling, another layer of crescent roll dough is added. The top layer is brushed with melted butter and sprinkled generously with a cinnamon sugar mixture before baking at 350°F until golden brown. This creates a rich, creamy cheesecake nestled between flaky crescent roll layers with a sweet cinnamon topping.

The dessert develops a slightly crisp and golden exterior while the interior remains creamy from the softened cream cheese. It can be optionally drizzled with honey for added sweetness and shine. Served at room temperature, it offers a contrast of textures and a mild vanilla and cinnamon flavor profile.

Perfect for sharing at parties or as a comforting homemade dessert, Sopapilla Cheesecake holds well in the refrigerator and enjoys fresh consumption to maintain its texture and flavor balance.

Ingredients

Servings
  • 2 (8 ounce) crescent rolls refrigerated, tubes
  • 2 (8 ounce) package cream cheese softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1/4 cup butter melted

For the Cinnamon Sugar

  • 1/2 cup sugar
  • 1 1/2 tablespoon cinnamon

Instructions

  1. Preheat oven to 350. Unroll and spread 1 can of crescent rolls on the bottom of an un-greased 9x13 pan.
  2. In a medium bowl, beat cream cheese, sugar, and vanilla. Spread mixture over the crescent rolls in the pan.
  3. Unroll and spread the remaining crescent rolls over the cream cheese mixture.
  4. In a small bowl, mix cinnamon and sugar. Spread melted butter over the top of the crescent rolls (you probably won't use the whole 1/4 cup) and and sprinkle generously with cinnamon sugar.
  5. Bake for 30 minutes, or until golden brown. Optional: Lightly drizzle with honey.
  6. Cool to room temperature and serve. Refrigerate any leftovers.

Notes

  • Store leftovers in an airtight container in the refrigerator to keep the layers fresh.
  • The dessert is best eaten within a few days as it tends to be very popular and doesn't last long.
  • Optionally drizzle honey over the baked cheesecake for added sweetness and a glossy finish before serving.
