Spicy Chicken Marinade Recipe

The Spicy Chicken Marinade Recipe blends chipotle peppers in adobo sauce, apple cider vinegar, and a combination of dried herbs and spices to create a smoky, well-seasoned marinade. Designed for a range of chicken cuts, this marinade infuses bold flavors ready to be cooked by baking, stovetop simmering, or grilling. Its versatility accommodates different cooking preferences and spice tolerances.

Description

This marinade combines neutral oil, chipotle peppers in adobo, apple cider vinegar, onion and garlic powders, oregano, salt, and black pepper blended into a flavorful sauce. Marinating chicken in this mixture allows the smoky heat of the chipotle to permeate the meat, balanced by the acidity of vinegar. The recipe specifies marinating times from 30 minutes up to 24 hours for deeper flavor absorption.

Cooking methods offered include baking at 420°F, stovetop simmering with additional water, and grilling. Each method suits different cuts of chicken: boneless thighs, breasts, wings, or bone-in pieces, with specified timings ensuring thorough cooking to 165°F. The recipe notes options for adjusting spice levels by reducing chipotle amount.

This marinade works well for preparing a variety of chicken dishes with smoky, spicy notes. The directions cater to different cooking skills and household equipment, allowing cooks to select their preferred method while achieving a consistent seasoning profile.

To manage heat intensity, halving the chipotle peppers can be done. The marinade quantity fits roughly 16 boneless thighs, 8 boneless breasts, or 4 pounds of wings, accommodating family-sized cooking or meal prepping.

Ingredients

Servings
  • ¼ cup neutral-flavored oil like avocado or canola
  • 12 ounce chipotle peppers in adobo sauce see notes, canned
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 lb chicken see notes

Instructions

  1. Add the oil, chipotle peppers in adobo sauce, vinegar, onion powder, garlic powder, oregano, salt, and pepper to your food processor and blend for 1 minute. It's ok if the marinade is still a little chunky.
  2. Pour the marinade over the chicken and let it marinate in your fridge for at least 30 minutes or up to 24 hours. Choose one of the methods below for cooking the chicken.

Bake

  1. This is the simplest method. Put the marinade-covered chicken into a pan and pop it into your oven at 420 degrees Fahrenheit. Boneless thighs - 12-15 minutes. Boneless breast - 20-30 minutes. Bone-in thighs and wings - 35-40 minutes. All cuts should be cooked to 165 degrees Fahrenheit.

Stovetop

  1. Chicken breasts or boneless thighs work best for this method. Put the chicken, marinade, and ¼ cup of water into the pan, cover it and let it simmer gently for 8-10 minutes for thighs and 15-20 minutes for breasts. Add more water, if needed.

Grilled

  1. If you want to grill your spicy chicken, a grill mat will help keep your bbq clean. Boneless chicken thighs are your best option as they cook quickly so you won't risk burning the marinade.

Slow cooker

  1. Skinless chicken breast or thighs work best for a crockpot. Add the chicken, marinade, and ¼ cup of water and set the timer to cook for 2-3 hours on high or 4-5 hours on low.

Notes

  • This marinade is proportioned for up to 16 boneless chicken thighs or 8 boneless breasts.
  • For a milder flavor, reduce the chipotle peppers to half a can.
  • Adjust cooking times depending on chicken cut and thickness to ensure it reaches 165°F internally.
