Description

This recipe starts by heating frozen edamame briefly to thaw. A spice mix of orange zest, cayenne pepper, toasted sesame seeds, and freshly ground black pepper is prepared to add a citrusy heat and nutty flavor. A sauce is made by gently boiling soy sauce, reduced-sodium chicken broth, and honey until reduced by half, intensifying the sweet-salty balance. Separately, oil is heated in a skillet and garlic and ginger are sautéed quickly to release aroma but avoid burning. The edamame and prepared spice mix are then added to the pan and tossed for even coating. Finally, the reduced sauce is poured in and cooked with the edamame for a few minutes until slightly thickened and the pods are hot throughout.

  • 1/2 tsp orange zest
  • 1/4 tsp cayenne pepper
  • 1 tbsp sesame seeds (toasted)
  • black pepper to taste, freshly ground
  • 1/4 cup soy sauce or gluten-free soy sauce, reduced-sodium
  • 1/4 cup chicken broth reduced-sodium, or vegetable broth
  • 1 tbsp honey
  • 2 tsp canola oil or vegetable oil
  • 4 cloves garlic (chopped)
  • 1 tsp ginger grated
  • 5 cups edamame (in pod*)

Instructions

  1. *If frozen, place edamame in a microwave-safe bowl and heat edamame for 2-3 minutes, or until defrosted.
  2. In a small bowl, combine orange zest, cayenne, sesame seeds and black pepper.  Set aside.
  3. In a small sauce pot, bring soy sauce, chicken broth and honey to a slow boil over medium heat.
  4. Continue to gently boil until sauce is reduced by half, about 5 to 6 minutes.
  5. Meanwhile, heat a large non-stick skillet or wok over medium-high heat.
  6. Add the oil, garlic and ginger and sauté for 30 to 60 seconds.
  7. Add edamame and orange peel/spice mixture and toss to evenly coat.
  8. Add sauce to the edamame, toss and cook for an additional 2-3 minutes, or until sauce is slightly thickened and edamame is heated through.
