  • red lentils dried, rinsed, 1 ½ cups
  • diced tomatoes 1 can (14 oz
  • coconut milk 14 oz can
  • vegetable broth 3 cups
  • salt to taste
  • black pepper to taste
  • cilantro fresh, chopped, for garnish
  • lime wedges, optional, for serving

Instructions
