													Spicy Thai Chicken Pizza uses a rich peanut satay sauce with shredded chicken, colorful vegetables and topped with sweet honey roasted peanuts and spicy chili oil.

                                Ingredients
Pizza:
- 1 can refrigerated pizza crust
 - ½ cup chicken , cooked and shredded
 - 2 tablespoons roasted red pepper , dabbed dry and diced
 - 2 tablespoons carrot , shredded
 - 2 tablespoons celery , chopped
 - 2 tablespoons red onion , thinly sliced
 - 1 tablespoon scallions , chopped
 - 1 tablespoon cilantro , leaves only
 - Chinese chili oil
 - Fresh lime wedges
 - 1 tablespoon roasted peanuts , coarsely chopped
 
Peanut Satay Sauce:
- ½ cup creamy peanut butter
 - 2 tablespoons low sodium soy sauce
 - 1 tablespoon fresh ginger , grated
 - 1 clove fresh garlic , finely minced
 - 1 tablespoon fresh lime juice
 - 2 teaspoons light brown sugar
 
Instructions
Thai Peanut Satay:
- Combine the peanut butter, soy sauce, ginger, garlic, lime juice and brown sugar in a small food processor or a small bowl and whisk together. Set aside.
 
Thai Chicken Pizza:
- On a preheated pizza stone, par-cook the pizza crust according to package directions. Remove and allow to cook slightly before topping. Keep the oven on.
 - Spread the peanut satay sauce evenly over pizza crust. Top with the shredded chicken, roasted red pepper, carrot and celery. Bake for 10 minutes, or until top is golden brown.
 - Remove and evenly sprinkle the scallions, cilantro and peanuts over the pizza.
 - Drizzle with Chinese chili oil and spritz with the fresh lime wedges.
