Sticky Guinness Chicken Recipe

Sticky Guinness Chicken is made by simmering boneless, skinless chicken thighs in a thickened sauce of Guinness beer, ketchup, honey, balsamic vinegar, Dijon mustard, and garlic. The chicken is first browned to develop color, then slow-cooked uncovered in the sticky sauce, which concentrates and coats the meat with a glossy, sweet, and tangy glaze.

Description

The recipe combines dark Guinness beer with sweet honey and tangy ketchup and balsamic vinegar, enriched with Dijon mustard and garlic to form a distinctive sauce. The chicken thighs are browned in oil for a seared exterior and then simmered in the sauce, uncovered, to allow it to reduce to a sticky consistency.

The cooking process ensures the sauce thickens while the chicken finishes cooking through and absorbs the flavors. This creates a glossy coating that clings to the tender meat, balancing bitterness from the beer with sweetness from honey and tang from vinegar.

This sticky chicken can be served as a main dish alongside steamed vegetables or potatoes. The thick sauce makes it suitable for spooning over rice or mashed potatoes.

It is important to cook the chicken uncovered during the simmering stage to help the sauce thicken properly.

Ingredients

Servings
  • 1 cup Guinness beer
  • ¼ cup ketchup
  • ¼ cup honey
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 2 cloves garlic minced
  • 1 tablespoon neutral cooking oil generic cooking oil
  • 8 chicken thigh boneless, skinless

Instructions

  1. Add the Guinness, ketchup, honey, balsamic, dijon, and garlic to a small pot and bring it to a boil over high heat. Reduce the heat and simmer for 15 minutes, or until it starts to thicken.
  2. While the sauce is simmering, start the chicken. Heat the oil in a large frying pan over medium-high heat. Add the chicken to the pan and brown it on both sides, about 5 minutes total. Drain the fat from the pan.
  3. Reduce the heat to medium and then pour the slightly thickened Guinness sauce over the chicken and continue to cook the chicken, uncovered, turning it over a few times so the sauce coats both sides, for about 15 minutes, or until the sauce reduces and is thick and sticky.

Notes

  • Cook the chicken uncovered while simmering to ensure the sauce thickens and becomes sticky.
