Sticky Paleo Ribs Recipe
Description
The Sticky Paleo Ribs Recipe centers on a rack of baby back ribs given a flavorful rub comprising chili powder, smoked paprika, coconut sugar, garlic powder, salt, and black pepper. These ribs are cooked slowly in a crockpot, which ensures the meat becomes tender and infused with spice. The accompanying paleo BBQ sauce blends savory tomato sauce with collagen powder for richness, balanced by coconut sugar and apple cider vinegar for sweet and tangy notes. Adding dark chocolate at the end introduces a subtle bittersweet depth, while liquid smoke imparts a smoky aroma. Though slow cooking is the core technique, the ribs can be finished under the grill or baked to develop a sticky, caramelized crust.
The ribs serve well as a main dish requiring minimal hands-on cooking time, suitable for gatherings or family meals. The sticky BBQ glaze enhances the ribs' texture, providing a saucy coating that complements the tender meat inside. This recipe is aimed at those following paleo guidelines without compromising on traditional rib flavors.
The use of collagen powder is optional; it enriches the sauce's body without affecting taste, but substitutions or omission are possible. Removing the rib's membrane is key for tenderness and allows the rub and sauce to penetrate better. Cutting the rib rack in halves is recommended if the crockpot is small. This recipe does not specify leftover handling but slow-cooked ribs typically reheat well in an oven or covered skillet.
Ingredients
- 1 rack baby back ribs also called pork back ribs, about 2 lb
Paleo Rib Rub
- 2 tablespoons coconut sugar
- 2 tablespoons chili powder
- 2 tablespoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon sea salt
- ½ teaspoon black pepper
Paleo BBQ Sauce
- ½ cup tomato sauce
- ¼ cup collagen powder see notes
- ¼ cup coconut sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon salt sea salt
- liquid smoke 6 drops
- 2 tablespoons dark chocolate chopped
Instructions
- Remove the thin, papery skin from the back of the ribs. Once you get it started, it should pull off in one piece. Some butchers will do this for you. If you have a small BBQ, cut the rack of ribs in half.
- Mix the rub ingredients together in a small bowl. Sprinkle the rub over the meaty side of the ribs and pat it down so that it is well covered.
- Pop the ribs into your crockpot and cook for 4 hours on high or 8 hours on low.
- Add the tomato sauce, collagen, coconut sugar, apple cider vinegar, chili powder, smoked paprika, garlic powder, sea salt, and (if using) the liquid smoke to a small pan over medium-high heat. Whisk the ingredients together and bring it to a boil. Remove the pan from the heat, add the chocolate, and whisk it into the BBQ sauce.
To Grill the ribs
- Preheat your grill to medium-high. Take the ribs out of the crockpot and baste them generously in the chocolate BBQ sauce. Grill for 20 minutes, turning halfway through.
To Bake the Ribs
- Preheat your oven to broil. Take the ribs out of the crockpot and place them on a baking sheet. Baste them generously with the chocolate BBQ sauce then broil for 3-5 minutes on each side.
Notes
- Remove the thin membrane from the back of the ribs to improve tenderness and flavor absorption.
- Collagen powder enriches the BBQ sauce's texture and adds nutrients but can be omitted or substituted; test alternative brands for solubility.
- If using a small crockpot, cut the rib rack in half for better fit and even cooking.
